This is a special (and expensive) once a year treat! I make this for our dessert every Christmas and it is our girl's favourite. The amaretti cookies and Marsala wine really make this. I always find the cookies at Longos.
• 4 pkgs of amaretti biscuits
• 1 c strong brewed coffee
• ½ c Marsala wine
• 1 ⅓ c sugar
• 3 X 500 gram-tubs mascarpone cheese (room temp)
• 9 egg whites
• Semisweet chocolate
• Fresh raspberries
Combine hot coffee with ¼ cup Marsala wine. Stir in ⅔ cup sugar until disolved.
Dip cookies in coffee mixture and place a single layer in the trifle dish.
Beat the mascarpone cheese with remaining ¼ cup Marsala and ⅔ cup sugar. Add more of each if needed.
Beat egg whites until soft peaks form. Fold into cheese mixture.
Spread a layer of the cheese mixture on the cookies. Repeat the cookie/cheese layers several times (I usually get 7 to 8 layers)
Chill overnight (can be made 2 days ahead )
Decorate top of trifle with grated chocolate and raspberries. I also use a ribbon on the outside at Christmas.
